1.5 cup all-purpose flour
2 tbsp sugar
2 tsp baking powder
0.5 tsp salt
1.25 cup milk
1 whole egg
3 tbsp melted butter or oil (plus more for the pan)
1 tsp vanilla (optional)

Whisk flour, sugar, baking powder, and salt in a bowl.
In another bowl whisk milk, egg, melted butter, and vanilla.
Pour wet into dry and stir until just combined — a few lumps are fine.
Heat a lightly greased skillet over medium. Scoop ¼-cup batter per pancake.
Cook until bubbles form and edges look set; flip and cook until golden. Serve with syrup or jam.
